-10 EUR Chablis 1994
étiquette
Domaine: René et Vincent Dauvissat
Varieties, vine age: Chardonnay
Soil, vine location: Jurassic marls
Wine-making: hand-harvested, fermentation in casks
Wine-storing: 10 months in casks from the Allier
Colour, bouquet: pale gold, chalk and honey fragrances
Taste: fat, very long and mineral, final note of honey
Conclusion: a surprising wine for a simple"village"; balanced but with character
Peak, ageing: should be carafed; the honey character is better revealed by airing; very nice now and will age well
Accompaning dish: went very well with hake, mushrooms and a potato-purée
Date of tasting: December 1999
